Dinner ready in 30 minutes! Enjoy this flavorful turkey, bacon, and scallion grilled cheese sandwich. I made this mouth-watering sandwich for Freddy and Mai Dad, and I swear, they both gobbled it down in seconds. And better yet, I have already made this 3 times this week! This recipe is perfect for weeknights when you want something yummy but easy, or even better, it is a great treat to cook up for your special someone. You can thank me later ;) The recipe is below!

8 slices bacon
3 tablespoons butter, softened
8 slices whole-grain bread
6 tablespoons finely chopped sun-dried tomatoes in oil
8 slices Swiss cheese (1 oz each)
12 oz oven-roasted turkey breast slices
1/2 cup scallions
1/4 cup Sriracha
1/4 Dijon mustard.
1. In a 12-inch nonstick skillet, cook bacon until crisp; drain on paper towels.
2. Combine scallions, mustard and sriracha in a bowl.
Meanwhile, spread butter on one side of each bread slice. Spread rounded tablespoons of the tomatoes on unbuttered side of 4 of the bread slices. Spread sriracha blend. Then top each with one slice of the cheese, turkey, bacon, the second slice of cheese and the remaining bread slice, buttered side up.
3. Heat griddle or 12-inch nonstick skillet over medium heat. In hot skillet, cook sandwiches 3 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; cook 3 minutes longer or until cheese is melted and sandwich is deep golden brown.
